I'm running a similar amount myself - all adding additional functionality for my readers or myself. The only problem would arise if the site suffers as a whole in terms of performance and having too many options that bamboozle it's readership.

I've been lucky that I've had someone in to find which plugins are hogs and to find alternatives e.g. being told that Lightbox alone was accounting for 50% of my load time.
Also, I dont' think you should add a plugin unless there is a real reader benefit. If you look at my list the only plugins which are for 'me' are: admin big width, php widgets, all in one and TLA. There are many tweaks I've done manually to reduce the need to use a plugin

I think Sitemaps are totally useless. No reader is going to scroll through a page containing a huge long list of posts and cats e.g this site has nearly 2,500 posts.....I do use the ELA plugin which at least makes my archive pages more manageable, and definitely a lot better looking!
I use mint for stats, which I combine with a plugin to generate the most popular posts
What plugin do you use for the addition of "number of comments", "save to del.icio.us",... to your RSS feeds?

That's not a plugin - Feedburner does that. Go into your feed settings and go to optimize/feedflare
Btw, love the theme. Very clean and organized.
Defo ditch Lightbox.
